Regenerative Viticulture

The Serranía de Ronda, with its distinct topography marked by soaring altitudes and the confluence of Mediterranean and Atlantic winds, offers an exceptional environment for grape cultivation.

This unique terroir, combined with our commitment to innovative viticulture practices, allows us to cultivate grapes of exceptional quality.

We focus on regenerative viticulture, going beyond biodynamics to adapt to climate change and enhance soil life. Our vineyards, with varieties like Petit Verdot and Blaufränkisch, produce high-quality grapes, and we continue to experiment with Mediterranean varieties such as Garnacha.

Does it not please you that old earth is waking,
And young virgin wine sparkles ripe for the taking?
— Abu Nuwas

We keep a collection we call “Memoria Líquida de La Donaira”, with wines from 2010 to 2016, which are more classic and inspired by the new world of Napa Valley, Argentina, Australia.

Syrah, Cabernet Sauvignon, Cabernet Franc and Petit Verdot.

Our wines reflect the same philosophy that guides every aspect of La Donaira: respect for nature, craftsmanship and authenticity. Working closely with small winegrowers across Andalusia, we support regenerative viticulture and help preserve old vineyards and native grape varieties that might otherwise disappear.

Each wine is crafted with great care, using hand-selected grapes harvested at their optimum moment. We enjoy exploring traditional and low-intervention winemaking techniques, including ancestral sparkling wines, orange wines, field blends and extended ageing. Clay amphoras also play an important role in many of our vinifications, allowing the wines to express their origin with purity and character.
